In the spirit of British Pie Week, I though I’d share with you this delicious and healthy Sweet Potato and lentil Dhal Pie. Now, before you pie fanatics start pointing out that that’s not a real traditional British pie – I know, but because it taste so good I just had to share it with you.
It’s perfect if you’re a vegetarian, but if you must have your meat, it works great with a nice piece of grilled chicken or lamb too.
The lentils provides a nice fix of protein and fibre, and you get lots of other good nutrients from the veg, the sweet potato in particular is a great source of beta-carotene, and the sweetness it provides when combined with the other curry flavours are just out of this world.
