Do not let the idea of beetroot put you off from trying these moist, moreish chocolate brownies. If you’ve never tried a piece of chocolate beetroot cake before, I can reassure you that these brownies are absolutely delicious. So why not give them a go…

Ingredients

4 Eggs
113g Self-raising flour
50g Dark chocolate chips
2 Tbsp Cocoa powder
3 Average sized cooked beetroots
6 Tbsp sweetener
1 Tsp vanilla extract

Instructions

Preheat the oven to 180'c and line a 8" square cake tin with parchment paper.
Blitz the beetroots to a puree, add the eggs, sweetener and vanilla extract. Using an electric whisk, whisk together until light and fluffy.
Sieve in the flour and cocoa powder a little at a time and fold in using a metal spoon. Once all the flour is folded in fold in the chocolate chips. Pour into the prepared cake tin and bake in the centre of the oven for 25-30 minutes or until a skewer inserted into the brownies comes out clean.
Allow to cool and cut into 15 even pieces. Enjoy!

Tried this today for taster session tomorrow. I have a little soggy bottom so I think the beetroot was too big, however, I added a shot of espresso powder, and a sprinkle of hot chilli powder & a touch of Birdseye chilli flakes 🙂 Not too bad at all Mel.   Like your idea of espresso and chilli, and really see this working. I will have to give it a go, Not sure about Little soggy bottom but hope you have it under control now LOL 🙂
