Did someone say PIZZA? Yep that’s right, today’s recipe is somewhat of a strange concoction, BUT let me tell you this, IT works.  Now I can’t take credit for this concept, but I have put my own spin on this recipe and this is what I’ve come up with .  I hope you enjoy it as much as I have.  This is also a great one for the family too as my kids demolished it in record time.

Ingredients

  • 150g Wholewheat spaghetti, (cooked as per pkt instructions)
  • 3 Eggs, whisked
  • 1/2 Tsp dried mixed herbs
  • Salt & Pepper
  • For the Pizza Sauce
  • 100ml Passata
  • 1-2 Tbsp Balsamic Vinegar
  • 1/4 tsp Dried mixed herbs
  • Salt & Pepper
  • Toppings
  • 65g Reduced fat Mozzarella
  • 40g Reduced fat Cheddar
  • Cooked Meats/Veggies of your Choice

  • 28g Carbohydrates

  • 6g Saturated Fat

  • 24g Protein

Instructions

  1. Preheat oven to 180'C.  Add seasoning and mixed herbs to the eggs, add the spaghetti and stir to coat evenly.
  2. Pour into a non-stick flan tin or similar and bake for 20 minutes.
  3. Put all the ingredients for the pizza sauce into a saucepan and cook on a low heat for 5-10 minutes until the sauce starts to reduce.
  4. Add the sauce to the cooked spaghetti base, add cheese and then toppings of your choice, then place back in the oven for 10 minutes. Enjoy with a fresh garden salad.
