Hey Guys, I know its been a while, but I’m pleased to say that I’m back in the kitchen. I did have a video to go with this recipe, but due to a technical fault I was unable to upload the file.

Anyway I don’t want to ramble on about nothing so here it is…

Ingredients

  • 400g Frozen chicken breast chunks
  • (the chicken you cook from frozen)
  • 150g lean diced smoked bacon
  • 1-2 leeks, trimmed, washed and sliced
  • 1 red bell pepper, sliced
  • 1-2 cloves garlic, finely sliced
  • 150g button mushrooms, quartet
  • 1 tin low fat condensed chicken soup
  • 200-300ml chicken stock
  • Bay leaf
  • 2-3 sprigs of fresh thyme
  • Cooking spray

Instructions

  1. Spray a large saucepan with cooking spray and add the leeks, bacon and garlic, saute over a medium heat until the leeks has wilted down.
  2. Add the remaining ingredients and bring to the boil, reduce the heat to a simmer and cook for 30-40 minutes until the chicken is cooked through.
  3. Adjust the seasoning (if necessary) before serving.
  4. Serve with freshly cooked tagliatelle, mash potatoes or rice
