With the Jubilee weekend approaching I wanted to whip up something quick and easy while trying to keep a traditional touch too, so what I did was transformed the ever popular Eton mess into what I call a” Lite Berry Mess” The simplicity of this is incredible.

Ingredients
- 1 Fat free Muller light Greek yogurt (The coconut & vanilla one taste great)
- 1 Meringue nest
- 1 cup of mixed berries

Instructions
- Add mixed berries to a small glass dish (glass/bowl) and crumble on half a meringue, top with half the yogurt.
- Add more berries and remaining meringue and finish with remaining yogurt, decorate with berries and a mint leaf.
- Enjoy!!
