Healthy Chicken Tikka Curry

Ingredients
- 1-2 tsp Coconut oil
- 2 Onions sliced
- 6 Garlic cloves, finely chopped
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- 4 -5 Fresh tomatoes, chopped
- 2-3” Fresh Ginger, grated
- 1 tsp Turmeric
- 1tsp Ground Cumin
- 1 tsp Garam Masala
- 2 tbsp Tikka Curry Powder
- 2 tbsp Fenugreek leaves
- 2 Bay leaves
- 2 tbsp Tomato puree
- 1 Red Pepper, chopped
- 100-200ml water
- 200g Squash, diced
- Freshly chopped Corriander
- 2 spoonfuls Greek Yoghurt
- 500g diced, skinless Chicken
- Salt
Instructions
- Heat the coconut oil, then add the cumin and mustard seeds, cook over a low heat for a few minutes.
- Add the sliced onions and allow to sweat down for about 5 minutes
- Add the garlic, ginger, remaining spices, bay leaves and puree give it a good mix and allow to cook for 2-3 minutes.
- Add the chopped tomatoes, peppers and water, cover and simmer on low heat for 15 minutes.
- Pop the squash into a microwave dish and microwave for 5-6 minutes.
- Add the squash and chicken to the curry, season, cover and continue cooking for 15minutes until the chicken is cooked.
- Turn off the heat, remove bay leaves and stir through the yoghurt and sprinkle over the coriander, and ENJOY!
