Quick & Easy Low Fat Creamy Mustard Chicken

Here’s another healthy quick and easy recipe for you – “Low Fat Creamy Mustard Chicken”! But before you run off and cook it – I have a little confession to make, this was the first time cooking this recipe, it was done on the spur of moment, using whatever ingredients was available and I might have misjudged the quantity of stock to use, and added a little too much.

After making the video, I wasn’t too happy with the finished dish, the sauce wasn’t as thick as I would have liked, and was in two minds of posting it…

But, because I served mine with Tagliatelle, I mixed it together and let it stand for a short while, it continued cooking in its residual heat and turned out thick and creamy with beautifully moist and succulent chicken.

So you could do as I did or start by adding less stock, maybe try 100ml to begin, or add a little cornflour to thicken it, or mix in a little extra cream cheese.

The flavour needed no adjusting, it was very satisfying; it was rich but subtle and had just the right kick.

Experimented Low Fat Creamy Mustard Chicken

Serves 3
2 chicken breast, sliced
1 leek, sliced
1 garlic clove, crushed
150g mushrooms, sliced
2 tsp wholegrain mustard
100-200ml stock
75g reduced fat soft cheese
(like Philadelphia lightest)

  1. Spray a large saucepan with cooking spray, add the leeks and cook over a gently heat for a couple of minutes. Add the mushrooms and garlic and cook for a couple more minutes.
  2. Add the mustard and chicken, and cook until the chicken starts to change colour, pour over the stock (start with 100ml), bring to the boil then simmer for about 10 minutes until the chicken is cooked.
  3. Stir through the cream cheese and allow to stand and thicken slightly before serving. If necessary add the remaining stock.

Calories 194, Fat 4g, Carbs 4g, Protein 35g

Serve with rice or pasta. (if using pasta to serve, add the pasta to the sauce and allow to stand for about 5 minutes allowing the pasta to absorb the sauce and thicken up)
