Do you find yourself eating a lot more, as the days get colder? Well you’re not alone, most of us have bigger appetites during the winter months (Not totally sure why). But fact is, we eat a lot more, and mostly crave foods that are high in fat and full of calories. A greasy burger and chips is more appealing than a salad on a cold winters day.
For dieters, this can be the hardest time of year. But all is not lost, you can still satisfy your cravings with food that is filling and comforting and remain healthy at the same time.
For example, I love a good hearty stew on a cold day, warm, comforting packed with nutritious veg and totally satisfying. One of my favourites is Provençal Beef stew cooked in the slow cooker, the smells and flavour from this stew is just heavenly. This is proper home cooking.
If you haven’t tried it yourself, here’s the recipe. You must give it ago and savour the experience.
Slow Cooked Provençal Beef Stew
Serves 6
Cook on low 6-8 hours, high 4-5 hours
Ingredients:
750g extra lean stewing beef, diced
2 bell peppers, evenly chopped
3 medium sized carrots, evenly diced
1 red onion, sliced
2 cloves garlic, crushed
2 tsp Italian seasoning
1 400g tin of chopped tomatoes
240ml stock
2 courgettes,evenly diced
Salt & fresh cracked pepper
Method:
Season and brown the meat in a hot frying pan, drain and transfer to the slow cooker. Add the carrots, peppers and onion.
Mix together the tomatoes, stock, Italian seasoning and garlic, pour over the beef cover and cook for 6-8 hours on low.
Stir in the courgettes 30 minutes before the end of cooking replace the cover and turn to high for an extra 30 minutes.
Serve with mashed potatoes or cooked pasta.
